This subject describes the skills and knowledge required to evaluate a range of Australian wines, provide advice to customers on their selection, and continuously extend personal product knowledge. It applies to hospitality, winery, retail and wholesale organisations that sell Australian wines.

- Discuss the characteristics of Australian wines with customers — grape varietals, regional characteristics, flavour profiles and food pairing — at a level matched to the customer; apply sensory evaluation techniques across sight, smell, taste and texture; and commit to ongoing product-knowledge development.

To complete the subject requirements safely and effectively the individual has been able to:
- Describe sensory evaluation techniques used in wine assessment; articulate the qualities and regional distinctions of major Australian wines from established and emerging regions; and account for current and emerging trends in the Australian wine industry.
